The fruit is crushed with the stems and left to macerate for three days

2021 Fossil & Fawn Chardonnay, Eola-Amity Hills, USA Vignale di Cecilia 20% Malted Rye from HighThe 2021 Chardonnay was sourced from two organically farmed vineyards the 46 year old, own rooted, dry farmed vines at No Clos Radio (83% of blend), and the newly planted Marin Vineyard in Yamhill Carlton AVA. Chardonnay from No Clos tends to be bright and lean, while the fruit from Marin Vineyard brings a plushness to the wine. The grapes were pressed, settled, and barrel fermented in a mix of Oregon and French oak. Bottled unfined unfiltered.
